Yummy Corn and Pumpkin Pudding
- 4 tbsp. butter
- 2 tbsp. shallots
- 2 c. corn kernels
- 1 can pumpkin
- 4 c. half-and-half
- 2 1/2 c. cornmeal
- 1 tbsp. fresh sage
- Salt and freshly ground pepper
- 1/4 pumpkin seeds
- In a large saucepan over medium heat, melt butter until it begins to brown slightly.
- Add shallots and corn, and saute for 4 minutes, stirring occasionally.
- Add pumpkin and half-and-half to the pan, slowly stirring to combine.
- Bring to a simmer.
- Slowly add cornmeal, stirring constantly.
- Reduce heat to medium-low and cook for 6 to 7 minutes.
- Add sage and continue to stir until the pudding is thick (the consistency of oatmeal).
- Season with salt and pepper to taste.
- Spoon pudding into a serving bowl and garnish with pumpkin seeds.
