sig's Courgette & Chocolate Cake
- 115 grams margarine
- 130 ml sunflower oil
- 100 grams castor sugar
- 200 grams soft brown sugar
- 3 eggs,beaten
- 2 tsp baking powder
- 130 ml milk or soya milk
- 350 grams plain flour
- 4 tbsp quality cocoa
- 2 1/2 tsp ground allspice
- 450 grams zucchini/courgettes ,peeled and grated
- 1 tsp vanilla essence
- 225 grams plain chocolate dots
- preheat oven to 190C/375 F/Gas5.Line 23cmx33cm baking tin with non-stick baking paper.
- cream margarine,oil and sugars together until fluffy,beat in eggs and milk
- sift flour,baking powder ,allspice and cocoa and gently fold into butter mixture.Stir in grated courgettes ,(or you can slice them and use a blender and blend them in )and vanilla essence,spoon into tin and smooth top.Sprinkle the Chocolate dots over top
- bake for 35-45 until cake is firm and a knife or skewer comes out clean,cut into squares whilst still warm and then leave to cool
