Chicken Italian-Style
- 1 large clove garlic
- 3 Tbsp. olive oil
- 1 can (28 oz.) Italian-style peeled tomatoes, drained
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. oregano, dried
- 1 tsp. parsley, dried
- 3 whole chicken breasts, boned, skinned and halved
- 2 eggs, beaten
- 1 c. dry bread crumbs
- 1/4 c. grated parmesan cheese
- 1/2 c. butter
- 1/2 lb. Mozzarella cheese, sliced
- Saute garlic in olive oil until golden and remove. Chop tomatoes and add to oil with salt, pepper, oregano and parsley. Simmer uncovered 25 minutes, stirring occasionally.
- Meanwhile, pound chicken breasts between pieces of waxed paper until thin. Dip chicken in eggs and then in mixture of bread crumbs and Parmesan cheese. Saute in butter until browned on both sides. Place chicken in shallow baking dish, top with sauce and slices of Mozzarella.
- Bake, uncovered in 350u0b0 oven for 20 to 25 minutes. Serves 12.
