Spicy Simmered Shirataki Noodles and Shimeji Mushrooms
- 1 pack Shirataki (konnyaku noodles)
- 1 clump Shimeji mushrooms
- 200 ml Dashi stock
- 1/2 tbsp Sugar
- 2 tbsp Mirin
- 2 tbsp Soy sauce
- 1 Red chili peppers (thinly sliced into rounds)
- Boil the shirataki noodles (or simply rinse in hot water) and cut into easy-to-eat lengths.
- Shred the shimeji mushrooms.
- Add dashi stock and seasoning ingredients to a pot, bring to a boil, and add shirataki noodles and the shimeji mushrooms.
- Add red chili peppers and simmer on medium heat for about 10 minutes, then serve.
