South Beach Phase2 Cheesecake Mousse Parfait

• 24 ounces 2% fat cottage cheese
• 1 (1 ounce) package sugar-free instant cheesecake pudding mix
• fresh blueberries

1. Blend cottage cheese smooth with a blender -- don't over blend.
2. Pour into a bowl and thoroughly mix in the dry pudding mix.
3. Chill.
4. Layer with fresh blueberries and enjoy!
