Stir-Fried Pork and Onion with Vinegar Sauce
- 700 grams Pork slices (loin, thigh, offcuts, etc)
- 2 tbsp Sake
- 2 tsp Sugar
- 1/2 tsp Salt
- 4 tbsp Katakuriko
- 1 Vegetable oil
- 1 Lettuce, cabbage, etc
- 1 Vinegar (for finish)
- 2 tbsp Mentsuyu (3x concentrate)
- 1 tsp Soy sauce
- 2 tbsp Sugar
- 2 tbsp Sake
- 2 tbsp Vinegar
- 2 tbsp Water
- 1 tsp Grated ginger
- 1/4 tsp Grated garlic
- Mix the seasoning ingredients.
- Cut the pork into your preferred size.
- Cut the onion into 1 ~ 2 mm slices.
- Transfer the pork from Step 2 to a bowl.
- Add sake, sugar, and salt.
- Rub in, and let it sit for a while, to make the meat tender.
- Add the katakuriko to Step 3.
- Pour vegetable oil into a heated frying pan.
- Add the pork from Step 3 and onion from Step 2, then stir-fry while separating them with chopsticks.
- When the pork and onion are cooked through, add the combined seasoning ingredients from Step 1, and stir.
- When the sauce has thickened, turn off the heat.
- Serve on a plate with shredded lettuce or cabbage.
- Drizzle vinegar for a finish if you like.
