Black Bean Sweet Potato Chilli
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 2 garlic cloves, crushed
- 1 jalapeno chile, seeded and minced
- 1 (28 ounce) canwhole tomatoes with juice
- 12 lb green beans, trimmed and each cut crosswise in half
- 3 medium sweet potatoes, peeled and cut into 1 1/2-inch chunks (about 1 1/2 pounds)
- 1 teaspoon sugar
- 1 teaspoon salt
- 2 (15 ounce) cans black beans, rinsed and drained
- Saute onion over med low heat for a couple minutes.
- Add garlic, and chilli and spices, saute a couple more minutes.
- Add tomatoes, green beans and sweet potatoes and turn heat to med high.
- Bring to a simmer and add black beans and sugar bring to a boil and simmer over low heat until sweet potatoes are tender.
