Green Tomato Dippers
- 10 to 12 green tomatoes (2 to 3-inches in diameter)
- 1 c. Caesar salad dressing
- 1/2 tsp. each salt and pepper
- 1 tsp. garlic powder
- 1 c. cornmeal
- 1 c. flour
- 1 c. vegetable oil
- 16 oz. Velveeta cheese, cubed
- 1/2 c. real mayonnaise
- 1/2 c. milk
- Using a paring knife, trim vine cores from tomatoes. Slice in rounds 1/4-inch thickness. Place in a large mixing bowl. Add dressing, salt, pepper and garlic powder. With a wooden spoon, toss lightly to cover each slice evenly. Chill 30 minutes. Mix cornmeal and flour in a shallow dish. Place vegetable oil in a heavy skillet over medium heat. Pour tomatoes in a strainer; rinse lightly with warm water and allow to drain. Coat each slice of tomato in cornmeal-flour mixture.
