Black Bean And Cheese Enchiladas Recipe

  1. Heat oven to 350 F. To make sauce, cook green onions and garlic in oil till tender.
  2. Add in tomatillos, green chilies, cilantro and oregano.
  3. Continue cooking till sauce comes to a boil; reduce heat to low and continue cooking about 10 min.
  4. Pour sauce into blender container.
  5. Cover and blend on high speed till smooth.
  6. Return to saucepan and stir in chicken broth.
  7. Cook over medium heat about 15 min.
  8. Dip each tortilla into sauce.
  9. Spoon about 1 1/2 tb.
  10. black beans and 2 tb.
  11. cheese onto each tortilla.
  12. Roll tortilla around filling.
  13. Place seam side down in 13" x 9" baking dish sprayed with non-stick cooking spray.
  14. Pour remaining sauce over tortillas; sprinkle with remaining cheese.
