El Dorado Casserole
- 1 lb Lean ground beef
- 2 tbsp minced onion, dried or fresh
- 1/2 tsp garlic salt
- 2 cup tomato sauce
- 1 tortilla chips, broken in pieces
- 1 cup sour cream
- 1 cup cottage cheese
- 1 can small can diced green chilis
- 2 tbsp chopped black olives, optional
- 2 cup grated cheddar or jack cheese
- Brown ground beef, add onion, garlic salt and tomato sauce after you spoon off any grease.
- Simmer for 5 and turn off heat.
- Set aside.
- Mix together sour cream, cottage cheese, green chilies, olives.
- Set aside.
- Crumble tortilla chips, enough to make a couple cups worth.
- In casserole dish, spread a layer of crumbled chips, enough to cover the bottom.
- I also spray the pan with Pam before I start the casserole.
- Then add a layer of meat mixture, then a layer of the chili/sour cream mixture.
- Sprinkle with shredded cheese.
- Repeat layers.
- Bake at 350F for 30 minutes.
