Bitter Melon Or Winter Melon Recipe
- 1 pound bitter melon or possibly winter melon
- 3 tbsp. veg. oil
- 1/2 pound pork
- 2 cloves garlic, chopped
- 1 onion, sliced
- 1 egg, beaten
- 4 ripe tomatoes
- 1/2 pound raw shrimp
- 1 c. shrimp stock Or possibly
- 1 c. chicken broth
- 1 teaspoon salt
- 1 teaspoon black pepper
- Slice pork into thin strips about 1-inch long, peel and chop tomatoes, shell and devein shrimp.
- Wash bitter melon and remove seeds.
- Slice thinly, crosswise, and reserve.
- (Peel winter melon, if it is used.)
- Heat oil in a frying pan and saute/fry pork till browned.
- Stir in garlic; then add in onion and tomatoes.
- Stir in shrimp and shrimp stock; cover and simmer till tender.
- When meat becomes tender, add in bitter melon, salt, and pepper.
- Then stir in the beaten egg.
- Cook for 3 min.
- Serve warm.
