Lemony Mint Tabbouleh

  1. Place bulgur in large bowl.
  2. Add enough hot water to cover bulgur by 2 inches.
  3. Cover with plastic wrap; let stand 30 min.
  4. Meanwhile, combine parsley, tomatoes, cucumbers, onions and mint in large bowl.
  5. Drain bulgur in colander; press gently to remove excess water.
  6. Add bulgur to parsley mixture along with remaining ingredients; mix lightly.
