Lemony Mint Tabbouleh
- 1/2 cup bulgur, uncooked, rinsed
- hot water
- 4 cups tightly packed chopped fresh parsley
- 1 large tomato, finely chopped
- 1/2 cup finely chopped English cucumber
- 3 green onions, finely chopped
- 1/3 cup finely chopped fresh mint
- 1 cup tightly packed shredded romaine lettuce
- 1/3 cup Kraft Calorie-Wise Zesty Italian Dressing
- 1/3 cup fresh lemon juice Safeway 4 ct For $5.00 thru 02/09
- Place bulgur in large bowl.
- Add enough hot water to cover bulgur by 2 inches.
- Cover with plastic wrap; let stand 30 min.
- Meanwhile, combine parsley, tomatoes, cucumbers, onions and mint in large bowl.
- Drain bulgur in colander; press gently to remove excess water.
- Add bulgur to parsley mixture along with remaining ingredients; mix lightly.
