No Bake Rice Krispie Date Nut Cookies
- 1/2 cup butter
- 1 cup sugar
- 1 egg, beaten
- 1 cup chopped dates
- 2 cups Rice Krispies
- 1/2 cup chopped nuts
- 1/2 tsp. vanilla
- 1 dash salt
- Coconut, shredded
- In a saucepan, cook butter, sugar, egg and dates for five minutes, stirring constantly.
- Cool to lukewarm; add to the Rice Krispies, nuts, vanilla and salt.
- Mix well; form into balls about the size of walnuts.
- Roll in coconut.
