Golden Nugget Meatballs
- 1 1/2 lb. ground beef
- 1 1/2 c. soft bread crumbs
- 1/3 c. chopped green pepper
- 1/4 tsp. dry mustard
- 1/2 tsp. garlic salt
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 egg, beaten
- 1/3 c. catsup
- 16 3/4-inch cubes sharp Cheddar cheese
- 3 Tbsp. lard or drippings
- 2 (8 oz.) cans tomato sauce
- Combine ground
- beef,
- bread
- crumbs,
- green pepper, dry mustard, garlic salt, salt, pepper, egg and catsup;
- shape into 16 balls (3 to 4 tablespoons per ball).
- Place a cheese cube in center,
- shaping
- meat
- around.
- Brown in lard;
- pour off drippings.
- Add
- tomato sauce, cover tightly and simmer 20 minutes. Remove
- cover
- and
- continue simmering 5 to 10 minutes or until sauce is slightly thickened.
