Baked Tomato & Feta Puffs
- 1 whole Sheet Puff Pastry (frozen)
- 2 Tablespoons Olive Oil (to Brush On Puff Pastry)
- 1/4 teaspoons Salt
- 1/4 teaspoons Pepper
- 1/4 teaspoons Basil
- 1/4 teaspoons Parsley
- 2 whole Ripe Tomatoes, Sliced
- 1 whole Small White Onion Sliced Finely
- 2 cups Feta Cheese Crumbles
- 1/4 cups Grated Parmesan For Garnishing After Baking
- Preheat oven to 400 F.
- On a large sheet pan add parchment paper and place thawed puff pastry on it.
- Brush with olive oil (remember to prick the puff pastry with a fork first).
- Then we will add the ingredients.
- In a small bowl add seasonings and mix with a fork.
- Set aside.
- Add slices of tomatoes evenly across pastry then add onions on top of that.
- With a spoon sprinkle seasonings across tomatoes and onions.
- Add feta crumbles across the top and place in the oven on the middle rack.
- Bake for 12-14 minutes or until golden brown.
- Remove from oven to a cutting board.
- Add grated Parmesan cheese across the top then cut into 4 squares, serve and enjoy!
