Baked Tomato & Feta Puffs

  1. Preheat oven to 400 F.
  2. On a large sheet pan add parchment paper and place thawed puff pastry on it.
  3. Brush with olive oil (remember to prick the puff pastry with a fork first).
  4. Then we will add the ingredients.
  5. In a small bowl add seasonings and mix with a fork.
  6. Set aside.
  7. Add slices of tomatoes evenly across pastry then add onions on top of that.
  8. With a spoon sprinkle seasonings across tomatoes and onions.
  9. Add feta crumbles across the top and place in the oven on the middle rack.
  10. Bake for 12-14 minutes or until golden brown.
  11. Remove from oven to a cutting board.
  12. Add grated Parmesan cheese across the top then cut into 4 squares, serve and enjoy!
