Mexican Turkey Recipe
- 1/4 c. cornmeal
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 lbs. skinless, boneless turkey or possibly chicken
- 2 tbsp. vegetable oil
- 1/2 c. onion & green pepper
- 1 garlic clove, chopped
- 2 teaspoon chili pwdr
- 1/2 teaspoon grnd cumin
- 1/2 c. chicken broth
- 1 (14 ounce.) can tomatoes, undrained
- 1/2 c. black olives, sliced
- Cut turkey in large chunks.
- Dredge in cornmeal, salt and pepper mix.
- Brown in oil over moderate heat.
- Remove turkey, reduce heat and cook onion, peppers, garlic, chili pwdr and cumin till softened; add in broth and tomatoes.
- Cover and simmer 20 min.
- Add in turkey, cover and simmer 25 min till tender.
- Add in olives, cook 5 more min.
- Serve with rice.
- Makes 4 servings.
