Mexican Turkey Recipe

  1. Cut turkey in large chunks.
  2. Dredge in cornmeal, salt and pepper mix.
  3. Brown in oil over moderate heat.
  4. Remove turkey, reduce heat and cook onion, peppers, garlic, chili pwdr and cumin till softened; add in broth and tomatoes.
  5. Cover and simmer 20 min.
  6. Add in turkey, cover and simmer 25 min till tender.
  7. Add in olives, cook 5 more min.
  8. Serve with rice.
  9. Makes 4 servings.
