Apricot Nectar Ice Recipe

  2. Sprinkle gelatin into 1/4 c. cool water.
  3. Let stand 5-10 min to soften.

  5. Put softened gelatin into 1-1/2 c. VERY warm water.
  6. Stir till gelatin is completely dissolved.
  7. Add in 1 c. sugar and stir till sugar is dissolved.

  9. Blend 2 c. apricot nectar, 2 Tbsp.
  10. orange juice and 2 tsp.
  11. grated lemon peel into the gelatin mix.
  12. Cold, then pour into a refrigerator tray.
  13. 4.
  14. Place in freezer and freeze till hard.
  15. This should take about 4 hrs.
  16. Serve in chilled sherbet glasses.
  17. Yield: about 1 qt.
