Chopped Beefsteak With Goat Cheese
- 1 1/2 pounds freshly chopped lean round steak
- 1/2 teaspoon chili powder
- 1/2 teaspoon coarsely ground black pepper
- Salt to taste
- 1/4 pound goat cheese of your choice, crumbled, at room temperature
- 2 tablespoons chopped chives or parsley
- Form 4 patties of about 3 inches in diameter and 3/4 inch thick.
- Do not handle the meat more than necessary or the texture will be ruined.
- Blend the chili powder, pepper and salt together.
- Sprinkle mixture over each side of the patties.
- Heat a cast-iron skillet.
- Place meat in skillet and grill 3 to 4 minutes on each side over high heat, depending on the desired degree of doneness.
- Preheat broiler.
- Transfer patties to a warm serving plate.
- Place 1 ounce of cheese on the center of each pattie and place under broiler for about 30 seconds.
- Top with chives and serve immediately.
