Baby Clams Steamed In Green Onion Broth Recipe
- 4 Tbsp. Extra virgin olive oil
- 1 Tbsp. Minced garlic
- 1 sm Onion peeled, sliced thin
- 3 c. Clam juice
- 1 c. White wine
- 3 Tbsp. Lemon juice
- 1 c. Parsley leaves - (packed)
- 1 Tbsp. Honey Salt to taste Freshly-grnd black pepper to taste
- 40 x Baby clams Grilled Garlic Bread see * Note
- Heat the oil in a large saucepan over medium-high heat till almost smoking and saute/fry the garlic till golden.
- Add in the onion and cook till soft.
- Add in the clam juice, wine and lemon juice and bring to a boil.
- Reduce heat and simmer for 10 min.
- Place the broth in a blender with the parsley, honey and salt and pepper to taste and process till pureed.
- Combine the broth and clams in a large saucepan over high heat and bring to a boil.
- Reduce heat, cover the pan and steam the clams till opened.
- Spoon into large bowls.
- Serve with Grilled Garlic Bread.
- This recipe yields 4 servings.
