Easy Taco Casserole
- 1 lb ground beef
- 1 (1 1/2 ounce) packet taco seasoning (I used low sodium)
- 1 (14 1/2 ounce) can diced tomatoes (I used unsalted)
- 1 (15 ounce) can black beans (or kidney beans)
- 8 ounces egg noodles (cooked)
- 2 cups mild cheddar cheese (shredded, separated)
- 8 ounces sour cream
- Preheat over to 350F; spray 8"x8" baking dish with non-stick spray.
- In a 4 qt sauce pan, brown ground beef, drain away extra grease.
- Mix the taco seasoning with the ground beef.
- Add tomatoes, beans, sour cream and 1c shredded cheese into beef mixture and stir.
- Stir in the cooked noodles until evenly mixed.
- Pour into the 8"x8" greased baking dish.
- Top with remaining cheese.
- Bake 25 minutes.
