Carrot Shira-ae with a Double Dose of Sesame Seeds

  1. Drain the tofu by breaking it into large pieces and place into a colander.
  2. If you're in a hurry, cover it with a small plate!
  3. Julienne the carrot and parboil in a pot of boiling water with salt (not listed in the ingredients) to desired tenderness, then drain in a colander.
  4. Add the sesame and seasonings to the drained tofu and mix well.
  5. There's no need to use a grinding bowl to mix; just stir it with a spoon or fork.
  6. To add a bit of color variation, I used black sesame seeds.
  7. Once the shira-ae tofu mixture base is well seasoned, add the carrots.
  8. Gently toss so the carrots don't break.
  9. Go easy on the sugar; the carrot gives a mild and delicious natural sweetness to the shira-ae.
  10. Season to taste.
