Carrot Shira-ae with a Double Dose of Sesame Seeds
- 1 Carrot
- 1/2 block Firm tofu
- 1 tbsp Toasted sesame seeds
- 2 tbsp Ground sesame seeds
- 1 1/2 tbsp Sugar
- 1/3 tsp Salt
- 1/2 tsp Miso
- 4 tbsp Sesame sauce
- 1/2 tsp Miso
- Drain the tofu by breaking it into large pieces and place into a colander.
- If you're in a hurry, cover it with a small plate!
- Julienne the carrot and parboil in a pot of boiling water with salt (not listed in the ingredients) to desired tenderness, then drain in a colander.
- Add the sesame and seasonings to the drained tofu and mix well.
- There's no need to use a grinding bowl to mix; just stir it with a spoon or fork.
- To add a bit of color variation, I used black sesame seeds.
- Once the shira-ae tofu mixture base is well seasoned, add the carrots.
- Gently toss so the carrots don't break.
- Go easy on the sugar; the carrot gives a mild and delicious natural sweetness to the shira-ae.
- Season to taste.
