Cajun Cabbage(Serves Six. Preparation Time: One Hour)

  1. Fry bacon until crisp.
  2. Saute garlic in bacon fat; add onion and saute.
  3. Add bell pepper and continue to saute.
  4. Add cabbage and continue sauteing.
  5. Add tomatoes and one can of water.
  6. Add cayenne pepper and cover.
  7. Simmer for one to three hours, stirring occasionally.
  8. You really can't overcook it.
  9. You may use two large onions, two bell peppers and two cans of tomatoes instead of a can of water.
  10. You can vary this receipt to taste on garlic and cayenne pepper.
