Cajun Cabbage(Serves Six. Preparation Time: One Hour)
- 1 large head cabbage, shredded
- 1 large onion, chopped coarse
- 1 large bell pepper, sliced (half red and half green for color)
- 6 slices bacon, cut into small pieces
- 4 cloves garlic, crushed (may use more if desired)
- 1 tsp. or less cayenne pepper
- 1 large can tomatoes, chopped and juice
- Fry bacon until crisp.
- Saute garlic in bacon fat; add onion and saute.
- Add bell pepper and continue to saute.
- Add cabbage and continue sauteing.
- Add tomatoes and one can of water.
- Add cayenne pepper and cover.
- Simmer for one to three hours, stirring occasionally.
- You really can't overcook it.
- You may use two large onions, two bell peppers and two cans of tomatoes instead of a can of water.
- You can vary this receipt to taste on garlic and cayenne pepper.
