PB&J Quinoa Power Balls
- 1 12 cups quinoa, divided
- 1 cup lightly dry roasted salted peanut
- 14 cup ground flax seeds
- 23 cup dried blueberries
- 1 pinch sea salt
- 12 cup unsweetened natural-style peanut butter
- 3 tablespoons liquid honey
- 1 teaspoon vanilla extract
- In food processor, combine 1 cup quinoa flakes, peanuts and flax seeds.
- Pulse until finely chopped.
- Add blueberries, salt, peanut butter, honey and vanilla.
- Pulse until mixture forms a dough.
- Place remaining quinoa flakes in shallow dish.
- Form dough into 24 balls.
- Roll balls in quinoa flakes until evenly coated.
- Refrigerate for 1 hour.
