PB&J Quinoa Power Balls

  1. In food processor, combine 1 cup quinoa flakes, peanuts and flax seeds.
  2. Pulse until finely chopped.
  3. Add blueberries, salt, peanut butter, honey and vanilla.
  4. Pulse until mixture forms a dough.
  5. Place remaining quinoa flakes in shallow dish.
  6. Form dough into 24 balls.
  7. Roll balls in quinoa flakes until evenly coated.
  8. Refrigerate for 1 hour.
