Raspberry-Hazelnut Cordial Crepes with Chocolate Cream Cheese Filling
- 2 cups hazelnut-flavoured liqueur
- 2 qt. fresh raspberries
- Philadelphia Brick Cream Cheese
- Baker's Semi-Sweet Chocolate
- 2 cups powdered sugar
- 32 each prepared crepes (10 inch)
- 2 Tbsp. powdered sugar
- 2/3 cup sliced almonds, toasted
- Pour liqueur over berries; let stand 30 min.
- Mix cream cheese, chocolate and sugar until well blended.
- Spoon into pastry bag.
- Warm crepes; fill each with 2 oz.
- (60 g) cream cheese mixture and 1/4 cup (50 mL) berries.
- Fold into a triangle.
- Serve 2 crepes stacked together on a plate, sprinkled with 1/2 tsp.
- (2 mL) powdered sugar and 2 tsp.
- (10 mL) nuts.
