Mom's Pumpkin Bars
- 4 eggs
- 1 cup salad oil (I use canola oil)
- 2 cups sugar
- 15 ounces pumpkin
- 2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 12 teaspoon salt
- 2 teaspoons cinnamon
- 12 teaspoon ginger
- 12 teaspoon clove
- 12 teaspoon nutmeg
- 6 ounces cream cheese
- 14 cup margarine
- 1 tablespoon milk
- 1 teaspoon vanilla
- 4 cups powdered sugar
- Mix the first four ingredients in a bowl (eggs through pumpkin).
- Mix the remaining ingredients in a bowl (flour through nutmeg).
- Combine flour mixture with wet mixture.
- Beat together until combined.
- Pour into two 9 x 13 inch pans.
- Bake at 350 for 25-30 minutes.
- To prepare the cream cheese frosting, combine the listed ingredients (cream cheese through powdered sugar).
- Add more milk or powdered sugar to reach desired consistency.
- Frost bars when cool.
