Chips and Mango Salsa
- 6 corn tortillas
- 1/4 tsp. salt
- 1 mango
- 1/2 seedless cucumber
- 2 tbsp. fresh lime juice
- 1/2 tsp. freshly grated lime peel
- 1/4 tsp. salt
- .13 tsp. cayenne
- Cut 6 tortillas into quarters; sprinkle with 1/4 teaspoon salt.
- In 3 batches, place tortillas between 2 paper towels on microwave-safe large plate in single layer.
- Microwave on High 2 minutes or until crisp.
- In medium bowl, stir mango, cucumber, lime juice, lime peel, 1/4 teaspoon salt, and cayenne.
