Orzo and Vegetables
- 1 cup orzo pasta
- 4 cups broccoli florets
- 12 cup marinated artichoke hearts, coarsley chopped
- 6 ounces canned ripe olives, chopped
- 2 medium tomatoes, chopped
- 2 scallions, chopped
- 2 tablespoons olive oil
- 3 tablespoons red wine vinegar
- 14 teaspoon garlic salt
- 14 teaspoon pepper
- 1 cup diced cooked chicken
- 6 cups mixed salad greens
- In a large pot of boiling salted water, cook orzo, 6 minutes.
- Add broccoli to pot and cook 4-5 minutes longer.
- Drain.
- Add artichoke hearts, olives, tomatoes, scallions, oil, vinegar, garlic salt, pepper and chicken to the pot, tossing well.
- Serve on mixed salad greens.
