Prosciutto Rollatini
- 6 slice prosciutto or smoked ham
- 3 tbsp. toasted onion mustard, or flavored mustard of choice
- Freshly ground black pepper
- 2 oz. mozzarella
- 1/4 c. matchstick strips red bell pepper
- 1/4 c. matchstick strips fresh fennel
- Fresh fennel fronds
- Place prosciutto slices on work surface; cut each in half lengthwise.
- Spread each strip with 3/4 teaspoon mustard, to cover; generously sprinkle with pepper.
- At narrowest end of prosciutto, place one strip each mozzarella, red pepper, and fennel.
- Roll up tightly to contain.
- Garnish with small frond fennel.
- Serve immediately, or cover with plastic wrap and refrigerate up to 3 hours.
- If refrigerated, let stand at room temperature 10 minutes before serving.
