Chipotle Flank Steak with rice
- 1 lb flank steak
- 1 tbsp olive oil
- 1 cup uncooked long grain rice
- 4 oz queso fresco
- 2 chipotle pepper in adobo sauce
- 1 lime
- 1 tbsp cilantro chopped
- 1/4 cup butter softened
- preheat oven to 350, heat a stainless steel pan over medium high heat until hot.
- Start rice an cook according to pacjage.
- Brush both sides of steak with oil, salt and pepper.
- Place steak in pan and cook for 4 minutes per side.
- place pan with steak in oven and roast 5-7 minutes or until it hits your preferred doneness.
- remove to carving plate.
- Chope chipotle pepper and add to butter.
- add cilantro and lime juice, stir well.
- Crumble queso cheese and add to cooked rice.
- Microwave butter until melted.
- slice steak, transfer to serving plate and drizzle with melted butter, add rice and serve.
