Vegan Fried Rice With Coconut Milk
- 2 cup cooked leftover white rice
- 4 tbsp coconut milk
- 8 small dice shallot or 1 large onion
- 2 cup mix dice red /green /yellow bell pepper
- 2 tbsp oil
- 1 handful peanut
- 4 clove garlic
- 3 small deseeded red chili pepper
- 4 tbsp toasted sesame seed
- 3 tbsp light soy sauce
- 1 tsp salt
- POUND PEANUT PASTE
- pound all ingredients to paste
- FRIED RICE
- with oil saute shallot then add pounded paste and mix bell pepper
- add cooked white rice with seasoning and stir fry and mix well
- add coconut milk then stir fry rice till fragrant and rice are dry about 3 minutes
- SERVING OPTION
- serve fried rice and mix pepper with coconut milk on banana leaf
