Chinese New Year Sugared Walnuts

  1. In shallow Dutch oven, dissolve sugar in 1/2 cup (125 mL) water over medium-high heat.
  2. Add walnuts, ginger, cinnamon and cardamom; bring to boil.
  3. Reduce heat to medium; simmer, stirring often, until liquid is crystallized and nuts are coated, about 8 minutes.
  4. Spread walnuts on rimmed baking sheet; bake in 350F (180C) oven for 5 minutes.
  5. With wooden spoon, break up nuts; bake, stirring once, until completely dry, about 15 minutes.
  6. Let cool.
  7. (Make-ahead: Store in airtight container for up to 1 week.)
  8. 3 cups.
