Mushroom Medley Shrimp Canapes
- 1 Tbsp. olive oil
- 3 cups sliced mixed fresh mushrooms
- 1/3 cup Philadelphia Chive & Onion Cream Cheese Product
- 1 sheet (1/2 of 397-g pkg.) frozen puff pastry, thawed
- 1 medium egg, beaten
- 24 frozen medium shrimp, thawed Safeway 1 lb For $8.99 thru 02/09
- 1/2 cup Cracker Barrel Finely Shredded 100% Parmesan Cheese
- 1 Tbsp. fresh chopped basil
- Preheat oven to 425F.
- Heat oil in skillet on medium heat.
- Add mushrooms; cook and stir 3 min.
- Increase heat to medium-high; cook 5 min., stirring occasionally.
- Meanwhile, roll pastry sheet to 15x9-inch rectangle on lightly floured surface.
- Cut lengthwise into 3 equal parts.
- Slide onto baking sheet.
- Prick all over with fork, leaving 3/4-inch left lengthwise margin on each part unpricked.
- Brush egg on unpricked portion.
- Bake 5 min.
- until pastry begins to puff and surface feels dry.
- Set aside.
- Add cream cheese product to mushroom mixture.
- Reduce heat to low; cook 3 min.
- Spoon mushroom mixture onto pastry, leaving puffed edge uncovered.
- Place shrimp evenly in centre of each pastry piece.
- Bake 10 min.
- until crust is puffed and golden brown.
- Sprinkle with Parmesan cheese.
- Bake an additional 2 min.
- until cheese melts.
- Remove from oven.
- Let cool briefly; sprinkle with basil.
- Cut into 24 pieces with shrimp on each piece.
- Arrange on platter; serve warm.
