Mike's Broccoli and Cauliflower Salad
- 1 head cauliflower, chopped finely
- 1 head broccoli, chopped finely
- 4 -5 slices red onions, chopped finely
- 4 -5 slices bacon
- 2 cups mayonnaise
- 1 cup sugar
- 3 tablespoons vinegar
- 1 12 cups shredded cheese
- In a skillet fry bacon until crisp, drain on paper towels and set aside.
- Cauliflower, broccoli and onion should be chopped into small pieces, and tossed together in a large bowl.
- (Think cole slaw texture).
- In a small bowl combine mayo, sugar and vinegar.
- Stir to combine.
- Pour dressing over veggies, and mix well.
- Crumble bacon and add with cheese and mix again.
- Serve cold.
- I would estimate you would need about a pound to a pound-and-a-half each of the cauliflower and broccoli and about a half of an onion.
- Cheddar cheese in what they usually use, but feel free to try any bold flavor cheese.
