Grilled Cheddar, Mustard and Chive Sandwiches

  1. Mix mayonnaise, chives and Dijon mustard in small bowl.
  2. Season with generous amount of pepper.
  3. Spread 1 side of each bread slice with mayonnaise mixture.
  4. Divide cheddar cheese among 4 bread slices, then top with remaining bread, mayonnaise side down.
  5. Preheat oven to 250F.
  6. Melt 2 tablespoons butter in griddle or heavy large skillet over medium heat.
  7. Add 2 sandwiches; turn to coat with butter.
  8. Cook until golden on each side and cheese melts, about 5 minutes per side.
  9. Transfer to baking sheet.
  10. Keep warm in oven.
  11. Repeat with remaining 2 tablespoons butter and remaining sandwiches.
