Chocolate Mocha Layer Cake

  1. Prepare whipped topping as directed on package, substituting cold strong brewed coffee for the cold water.
  2. Prepare cake batter as directed on package.
  3. Pour evenly into 3 full (2-inch) hotel pans (or 1 half 2-inch hotel pan for trial recipe).
  4. Bake as directed; cool completely.
  5. Refrigerate several hours or until chilled.
  6. Split each cake horizontally into 3 even layers.
  7. Place 1 cake layer in bottom of each of 3 (4-inch) hotel pans (or 1 pan for trial recipe); cover with 1/2 of the pudding, second cake layer and remaining pudding.
  8. Top with third cake layer; spread with whipped topping mixture.
  9. Sprinkle with chocolate chips.
  10. Refrigerate at least 4 hours before cutting to serve.
