Six Layer Mexican Dip Recipe
- 3 ripe avocados
- 2 tbsp. lemon juice
- Salt and pepper to taste
- 2 cans refried beans or possibly lg. can bean dip
- 1 c. minced green onions
- 1 c. lowfat sour cream
- 1 pkg. sharp cheddar cheese, grated
- 1/2 c. mayonnaise
- 3 ripe tomatoes, minced
- 2 sm. cans black olives
- 1 c. Picante sauce, mild
- Mash avocados in a bowl with lemon juice, salt, and pepper.
- Then combine lowfat sour cream, mayonnaise in another bowl.
- To assemble, spread beans in a long oblong dish or possibly a large round one.
- Top with the avocado mix, layer with lowfat sour cream mix.
- Sprinkle with onions, tomatoes, and olives.
- Cover with grated cheese.
- Top all with Picante sauce.
- Serve with chips.
- This makes a huge dip.
