Granola bars recipe
- 6 tbsp butter
- 3 tbsp maple syrup
- 3 tbsp fruit spread (such as pear or apricot)
- 2 tbsp pecan halves
- 4 tbsp mixed seeds such as sunflower, pumpkin or flax
- 2 tbsp ground almonds
- 100 g (3.5oz) light brown sugar
- 180 g (6.3oz) old-fashioned rolled oats (not cooking oats)
- 50 g (1.8oz) golden raisins
- Preheat the oven to 175C.
- Grease an 8-inch square cake pan with a little butter and line it with waxed or parchment paper.
- Place the butter, maple syrup, fruit spread, and sugar in a saucepan over medium heat.
- Heat until the butter has melted and the sugar has dissolved.
- Stir well to mix.
- Bring to a boil and cook for 2 minutes until it has a thick, sticky consistency.
- Place the remaining ingredients in a large bowl.
- Pour in the melted ingredients and mix well.
- Pour into the prepared cake pan, flatten with a wooden spoon, and bake for 1520 minutes until golden brown.
- Remove from the oven and leave to cool.
- Cut into squares.
- Keep in an airtight container for 34 days, or freeze extra portions the day they are made for up to 1 month.
- If freezing, defrost thoroughly, let come to room temperature, and serve.
