Ultimate Cheater Pork Loin
- 1 batch of brine (you pick)
- One 3-pound pork loin
- Vegetable oil
- 2 tablespoons Cheater Basic Dry Rub (page 45)
- BRINE the loin for 4 to 6 hours in the refrigerator (see page 77).
- HEAT the oven to 500F.
- DRAIN the loin, discarding the brine.
- Rinse and pat dry.
- Place the loin in a large roasting pan and brush with a light coating of vegetable oil.
- Sprinkle all sides of the loin with the dry rub.
- PLACE the loin in the oven and immediately reduce the heat to 300F.
- Cook for 1 hour, or until a meat thermometer reaches 155F.
- Let rest for 10 to 15 minutes before slicing.
