Ultimate Cheater Pork Loin

  1. BRINE the loin for 4 to 6 hours in the refrigerator (see page 77).
  2. HEAT the oven to 500F.
  3. DRAIN the loin, discarding the brine.
  4. Rinse and pat dry.
  5. Place the loin in a large roasting pan and brush with a light coating of vegetable oil.
  6. Sprinkle all sides of the loin with the dry rub.
  7. PLACE the loin in the oven and immediately reduce the heat to 300F.
  8. Cook for 1 hour, or until a meat thermometer reaches 155F.
  9. Let rest for 10 to 15 minutes before slicing.
