Orange-Honey-Pepper Glazed Baked Chicken
- 1 whole Valencia Orange, Zest And Juice
- 1 teaspoon Cracked Black Pepper
- 2 Tablespoons Pure Honey
- 2 whole Boneless And Skinless Chicken Breasts
- 1 cup Low Sodium Chicken Stock
- Preheat oven to 400 degrees F.
- In a small bowl, add orange zest and juice, pepper, and honey.
- Stir to mix.
- Brush liberally on both sides of chicken breasts.
- Transfer everything into a baking dish (I use an 8x8 inch dish) and add chicken stock.
- Cover with aluminum foil and bake 40 minutes.
- Shut off oven, remove foil and let chicken rest in residual oven heat a few minutes.
- I love to serve this over brown rice and herbs.
