Spicy Shrimp in Garlic Sauce
- 1 lb medium shrimp, peeled and deveined
- 2 tablespoons lime juice
- 1 tablespoon vegetable oil (may also use SmartBalance oil)
- 5 garlic cloves, minced
- 1 (14 1/2 ounce) can whole canned tomatoes, cut up
- 12 cup picante sauce
- 2 teaspoons chili powder
- 4 cups hot cooked brown rice
- Place shrimp in shallow dish and toss with lime juice to coat.
- Heat oil in skillet.
- Add garlic and cook until tender.
- Add tomatoes, picante sauce and chili powder.
- Heat to a boil then cover and cook over low heat for about 10 minutes.
- Add shrimp to mixture and cook about 5 minutes longer or until done.
- Serve over rice.
