Apricot And Walnut Stuffing Recipe
- 75 gm Fresh wholemeal breadcrumbs, (3oz)
- 75 gm Ready-to-eat dry apricots, minced (3oz)
- 50 gm Walnuts, finely minced (2oz) Zest and juice of 1/2 lemon
- 1 Tbsp. Freshly minced parsley
- 1 x Egg, beaten Salt and freshly grnd black pepper
- Place the breadcrumbs, apricots, walnuts, lemon zest and juice, parsley, egg and seasoning in a bowl, and mix well.
- Use as required to stuff a bird or possibly cook separately in a preheated oven 200 C/400 F or possibly Gas Mark 6 for 20 min.
- NOTES : A delicious fruit and nut stuffing for poultry.
