Original Dallas Jail House Chili

  1. Add masa harina as needed to thicken the chili as desired.
  2. Melt the suet in a large, heavy skillet or kettle.
  3. Add the ground beef, chopped garlic and seasonings.
  4. Cover.
  5. Cook over very low heat, stirring occasionally, for 4 hours.
  6. Add the water, broth and tomato paste.
  7. Continue cooking until the stew thickens slightly (about 1 hour).
  8. Add masa harina as needed to thicken the chili as desired.
