Joyce's Gazpacho Soup
- 1 garlic clove
- 2 teaspoons salt
- 13 cup mushroom, sliced
- 3 tablespoons oil
- 1 cup onion, chopped
- 2 cups tomatoes, chopped
- 1 14 cups bell peppers, chopped
- 1 cup celery, chopped
- 1 cup cucumber, peeled and chopped
- 2 teaspoons chives, chopped
- 1 tablespoon parsley, chopped
- 1 teaspoon black pepper
- 12 teaspoon Tabasco sauce
- 1 teaspoon Worcestershire sauce
- 12 cup tarragon vinegar
- 3 cups tomato juice
- Crush garlic on 1 teaspoons salt.
- Saute mushrooms in oil.
- Combine all ingredients in a stainless steel or glass bowl.
- Cover and chill at least 3 hours.
