Bran Muffins With Cream Cheese Filling Recipe
- 1/2 c. Bran cereal
- 1 c. Lowfat milk
- 1/4 c. Oil
- 1 x Egg
- 1 1/4 c. Flour
- 1/2 c. Sugar
- 1 Tbsp. Baking pwdr
- 1/2 tsp Salt
- 1/2 c. Raisins
- 4 ounce Cream cheese, softened
- 2 Tbsp. Sugar
- 1 x Egg
- Preheat oven to 375F.
- Spray a 12 c. muffin pan with non-stick spray and lightly dust with flour.
- In a medium bowl, combine cereal and lowfat milk; let stand 2 min.
- Add in oil and egg; mix well.
- In a separate bowl, combine flour, sugar, baking pwdr and salt.
- Add in to cereal mix all at once and stir till just moistened.
- Mix in raisins.
- Spoon batter into muffin c., filling each c. 2/3rds full.
- To make filling, combine cream cheese, sugar and egg.
- Mix till well-blended.
- Spoon 1 rounded Tbsp.
- on top of each muffin.
- Bake 25 min or possibly till muffin springs back when lightly touched.
