Turkey Cutlets with sauteed spinach and tomato slices

  1. Preheat oven to 375F
  2. In a gallon bag, combine panko breadcrumbs and spices.
  3. Add or delete spices to your taste.
  4. Shake bag and set aside.
  5. Rinse cutlets.
  6. If necessary slice in half and then slice into strips.
  7. Beat egg slightly in a bowl.
  8. Dip cutlets into egg.
  9. Place cutlets into plastic bag and shake until completely coated.
  10. Lay out coated strips on a foiled or sprayed pan.
  11. Place in oven for 30 minutes.
  12. Adjust oven times as needed.
  13. (Use thermometer to check cooking temp.
  14. for turkey)
  15. After 25 minutes, in a nonstick pan, add 1/2 cup of water,1Tablespoon of olive oil, and 1 tablespoon of fresh garlic.
  16. Heat on medium to medium high until heated.
  17. Add spinach and reduce heat to medium.
  18. Stir often until spinach is wilted.
  19. Do not overkill/cook spinach!
  20. Slice tomatoes and arrange on plate.
  21. Season according to taste.
  22. Add cutlets and spinach to plate.
