Sig's Beans with Onions and Pine Nuts
- 750 grams green fresh beans of choice ( green beans, string beans , snake beans)
- 1 tsp olive oil
- 1 medium onion (150g) ,thinly sliced
- 1/2 tsp red chilli flakes
- 2 tbsp brown sugar (or sweetner of choice)
- 3 tsp raspberry vinegar
- 1/2 cup pine nuts or flaked almonds (40g) toasted
- 2 tsp chopped fresh coriander
- 1 pinch of chilli or paprika
- Heat oil in pan and saute the onion slices with the chilli flakes .
- Add the sugar , vinegar and coriander reduce down to a syrup
- Trim the beans and cut into small pieces , heat in microwave , boil or steam
- Toast the pine nuts or almond flakes
- Add the beans with the pine nuts to the onion syrup , mix well .
- Cool slightly and serve with blinis , in a pancake or omelette
- Sprinkle top of pancake or omelette with paprika or chilli
