Sauteed Zucchini with Garlic and Herbs

  1. In a large skillet, heat oil, over medium-high heat.
  2. Add zucchini, scallions, and garlic.
  3. Saute for 6 to 8 minutes, or until zucchini is tender.
  4. Slowly pour in vegetable stock.
  5. Stir in sauce mix and parsley.
  6. Simmer for 1 1/2 to 2 minutes.
  7. Season, to taste, with salt and pepper.
