Easy Cheesy Potato Casserole (Aka:the Grandchildren's Favorite R
- 2 (10 3/4 ounce) cans cream of mushroom soup
- 2 cups shredded cheddar cheese
- 12 onion, chopped finely
- 2 cups sour cream
- 2 lbs frozen shredded hash browns, thawed (The Ore-Ida package is 30 oz., We buy that, as it's 1 lb 14 oz and it works fine)
- 12-34 cup grated parmesan cheese
- In a large bowl mix soup and cheese.
- Add onion and sour cream.
- Blend together.
- Fold in thawed potatoes.
- Spread into a greased 9x13" baking dish.
- Sprinkle grated parmesan cheese on top (My mom and I like to do a generous topping of parmesan, but a sprinkling will do as well).
- Bake at 350 degrees for 1 hour or until lightly browned on top.
