Thai Salad Recipe
- 2 or possibly 3 carrots, grated
- 1/2 jicama, grated
- Leaves from Boston, red or possibly green leaf lettuce (or possibly any mild flavored lettuce), washed, dry and torn into manageable pcs
- 1 ripe papaya, sliced
- 1 handful unsalted peanuts, minced
- Zest from 1 to 1 1/2 limes
- Thai dressing (below)
- Serves about 4
