Bacon Stuffed Steak Pinwheels Serves 2 Recipe

  1. Heat a skillet and cook the bacon slices till just tender.
  2. Remove them and set aside on paper towel to drain.
  3. Pour off all but 1 Tbsp.
  4. of the pan drippings and then add in the mushrooms and onion.
  5. Saute/fry till tender but not browned.
  6. Remove the pan from the heat and stir in the bread crumbs, cheese, parsley and pepper.
  7. Set the pan aside.
  8. Cut the steak into 4 strips, each about 1" wide.
  9. Place 2 strips together, overlapping slightly to create a long strip.
  10. Repeat with remaining 2 strips.
  11. Lb.
  12. the meat slightly to flatten it.
  13. Spread the reserved stuffing over both strips and then roll up like a jelly-roll.
  14. With the spiral side up, wrap each with 2 slices of the bacon and secure with a toothpick.
  15. Heat the oil in a skillet (you can use the same one as the stuffing) till medium/warm and then add in the steak pinwheels.
  16. Brown both sides and then remove them to a baking dish and add in the water to the pan (do not pour it over the meat).
  17. Cover tightly with foil and bake in a preheated 350 oven for 45 min or possibly till the meat is cooked through.
